Hurray for a no bake cookie recipe that contains no peanut butter or dairy!  I also love these frozen!
 

Makes approximately 36 cookies.

 

ELEMENTS:

One and one-half cups SUGAR

Half cup SOYMILK

Half cup COCONUT OIL

Three cups QUICK COOKING OATS (Use old fashioned rolled oats if you like them chewier.  Use gluten-free oats if needed.)

Two tablespoons GROUND FLAX SEED

One cup FLAKED COCONUT (I prefer unsweetened, raw, organic)

Six tablespoons UNSWEETENED COCOA POWDER

Half teaspoon PURE VANILLA EXTRACT

 

APPLICATION:

In a large saucepan combine sugar, milk, and coconut oil.  Bring to a boil while stirring constantly.  Boil for 2 minutes.  Remove from heat.  Stir in the oats, flax, coconut, cocoa, and vanilla until combined thoroughly.

Using a cookie scoop or tablespoon, drop rounded balls onto parchment paper and let stand until set.  (Approximately 45 minutes.)
