A quick and healthy meal for those who are in a serious time crunch.  In the picture above I was able to use red onion, bell pepper, and tomatoes fresh from our garden.  HEEEEEAVEN! 

 

Elements:

Cooked and shredded CHICKEN, seasoned with SALT and PEPPER if needed

PITA BREAD

Any FRESH VEGETABLES you want  (Such as tomatoes, red onion, green onion, lettuce, spinach, cucumber, shredded carrots, snow peas, sliced bell peppers, etc.)

HUMMUS

VEGAN SOUR CREAM

Fresh LEMON JUICE

SMOKED PAPRIKA

BLACK PEPPER

 

Application:

Prep the sauce by combining the last 5 ingredients in a small bowl.

Layer chicken, veg, and sauce inside the pita bread.  Fold and eat!

 

Tips:

You can save yourself even more prep time by cooking the meat beforehand!  Use homemade, previously-cooked-and-frozen shredded chicken, or cook your chicken in a crockpot the night before or during the day while you’re gone at work.  Or if all else fails, buy a whole roasted chicken from your nearest grocery store. (Costco is the best price for this.)

The sauce was something I threw together at the last minute that suited my family’s taste buds.  Feel free to experiment with different seasonings.

Don’t forget, this is also a great way to use up that leftover chicken/turkey/steak!
