When I eat these cookies I feel like Goldilocks when she feels the satisfying comfort of something being “just right.”  MMmMMmMmm!  Enjoy every chewy, nostalgic bite!

Makes approximately 5 dozen

 

ELEMENTS:

One cup NON-DAIRY COOKING MARGARINE (such as Nucoa) or COCONUT OIL.

One and a half cup DARK BROWN SUGAR

Two EGGS

Two teaspoons PURE VANILLA EXTRACT

One and a half cup WHOLE WHEAT FLOUR

One teaspoon BAKING SODA

One teaspoon BAKING POWDER

Three-quarters teaspoon SALT

One teaspoon GROUND CINNAMON

Three cups OLD FASHIONED OATS

One cup RAISINS

 

APPLICATION:

Preheat oven to 350F degrees.  Lightly grease baking sheets.

Cream butter and sugar together in a mixer, then add eggs and vanilla and beat until fluffy.  Add flour, baking soda, baking powder, and salt, beating until combined.  Stir in oats and raisins.

Using a cookie scoop, drop rounded tablespoons onto greased baking sheets.  Bake until light browned, about 10-12 minutes.  Remove from oven and let sit for 5 minutes before transferring to a cooling rack.

 

TIPS:

When it says to grease the pan, make sure you do it!  These suckers have a tendency to stick if not properly greased.

Some variations to try: add three-quarters cup unsweetened shredded coconut or two cups of chocolate chips to the batter.
