Makes 3-4 Servings
Elements:
One 16 oz. package of POTATO GNOCCHI (…or make them yourself! See the video tutorial link in the “Tips” section if needed.)
Drizzle of EXTRA VIRGIN OLIVE OIL
Three-quarters pound of GROUND PORK or GROUND ITALIAN SAUSAGE (Can also substitute for ground beef/chicken/turkey, etc. Just season well.)
Two cloves of GARLIC, crushed
One 28 oz. can of CRUSHED TOMATOES
Small splash of WHITE WINE VINEGAR
A couple handfuls of fresh BABY SPINACH, rinsed and roughly chopped (optional)
One tablespoon chopped fresh PARSLEY
One tablespoon chopped fresh BASIL
SALT and PEPPER to taste
Application:
Start a pot of salted water over high heat.
In a separate large pan over medium-high heat, cook pork (or other meat) until almost done. Drain the fat. Now add your oil and garlic and saute for a minute. Reduce the heat to medium and add the tomatoes, spinach, vinegar, and parsley. Stir well and simmer for 10 minutes. Lastly, stir in the basil and season with salt and pepper.
While the sauce is simmering, cook the gnocchi in the boiling water according to the package or homemade instructions.
Gently drain your gnocchi (you may need to remove them with a slotted spoon) and toss it in with the finished sauce before serving.
Tips:
Time the cooking of your gnocchi so it finishes close to the same time as the sauce. You don’t your gnocchi sitting in water or sitting dry for a long time waiting for the sauce to finish.
